Spices are a very convenient, quick way of incorporating
the six ayurvedic tastes--sweet, sour, salty, pungent,
bitter and astringent--at every meal.
To get the most from the spices you eat, buy the
best quality spices available--organic when you
can find them, and non-irradiated. Store spices
in clean, airtight jars in a cool, dark place and
buy in small quantities so you consume them in a
few weeks. A coffee-mill is helpful for dry-grinding
small quantities of spices.
