Grated Cucumber and Cashew Salad


Cashews combine well with other ingredients in mixed salads or cooked dishes.

You will need:

  • 1 cup grated cucumber
  • 1/4 cup coarsely crushed roasted cashews
  • 1 tbsp grated coconut
  • 1/4 tsp minced green chili pepper (optional)
  • Rock salt to taste (optional)
  • 1 tsp finely chopped fresh cilantro


Combine all the ingredients in a bowl and mix well.

 

Enjoy at room temperature.

 

(Serves 1)
