Papaya Mint Salsa


The papaya is revered by ayurvedic healers as a digestion-enhancing food.

The papaya is revered by ayurvedic healers as a digestion-enhancing food.

You will need:

  • 1 cup peeled diced sweet papaya
  • 1/2 cup peeled diced sweet pineapple
  • 2 tbsps pineapple juice
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 3 fresh mint leaves, shredded
  • Rock or sea salt to taste
  • Fresh ground black pepper to taste


Place all the ingredients in a bowl. Blend well with a fork. Cover and let flavors meld for about 15-20 minutes. Serve as an accompaniment to other foods.

 

Serves 2-4
