Ayurvedic Recipes:
Sautéed Zucchini with Lemon and Parsley


Parsley is a purifying herb helpful in moderation for all doshas.

Fresh parsley is a purifying herb helpful in small quantities for all doshas.

You will need:

  • 1 cup thinly sliced zucchini
  • Rock salt to taste
  • Fresh-ground black pepper to taste
  • 1 tsp chopped fresh parsley
  • 1/2 tsp fresh lemon juice
  • 1/8 tsp fresh lemon zest
  • 1 tbsp ghee (clarified butter)


Heat ghee in a pan until clear.

 

Add the zucchini and cook for 5-6 minutes on high heat, turning slices over, until zucchini slices are lightly browned.

 

Add salt and pepper and sauté for another 2-3 minutes.

 

Remove from heat and stir in lemon juice, zest and parsley.

 

Serve hot with a cooked grain and dhal.

 

(Serves 1)
