Heat ghee in a pan until clear.
Add the zucchini and cook for 5-6 minutes on high heat, turning slices over, until zucchini slices are lightly browned.
Add salt and pepper and sauté for another 2-3 minutes.
Remove from heat and stir in lemon juice, zest and parsley.
Serve hot with a cooked grain and dhal.
